English Muffin Breakfast Pizzas

Ingredients:

2 English muffins, split
2 tbsp butter
4 eggs, large
Salt and black pepper, to taste
20 mini pepperoni
1 green onion, thinly sliced
1 medium Roma tomato, diced
1/2 cup shredded cheddar cheese

Instructions:

1. Preheat your oven to 375°F (190°C).
2. Split the English muffins in half and lightly toast them. Place them on a baking sheet lined with parchment paper or a silicone baking mat.
3. In a skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, or to your desired level of doneness. Season the eggs with salt and black pepper while cooking.
4. While the eggs are cooking, assemble the English muffin breakfast pizzas.
Place 5 mini pepperoni slices on each English muffin half.
5. Once the eggs are cooked, carefully transfer them to the English muffin halves, placing one egg on each.
6. Top each English muffin pizza with shredded cheddar cheese.
7. Scatter the sliced green onions and diced Roma tomato evenly over the cheese.|
8. Bake the English muffin breakfast pizzas in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly.
9. Remove the baking sheet from the oven and let the pizzas cool slightly before serving.
10. Serve the English Muffin Breakfast Pizzas warm and enjoy them as a delicious and satisfying breakfast or brunch option!
